RECIPES AND TYPICAL PRODUCTS

The cuisine of the Valcamonica area is rich and varied: the flavours of the past are those offered by local trattorias and restaurants, simple and genuine culinary elaborations that draw on tradition. The recipes and typical products represent an essential part of the history and well-being of these territories, which have always been appreciated and savoured by locals and visitors alike.

FROM APPETISER TO DESSERT

First courses include, of course, ‘casoncelli’, ravioli filled with meat, vegetables and other more or less secret ingredients. But that’s not all: the typical local menu also includes tagliatelle, maltagliati, sometimes with chestnut flour, gnocchi, barley soups and tripe.

Among the meats, donkey stew, salted meat, sausages known as ‘strinù’ and pure pork sausages are well-known. There is also rabbit, poultry, game, hare and wild boar.
In addition to meat, there is freshwater fish from the lake, sometimes dried using traditional methods.

Corn or buckwheat polenta is the best traditional side dish for many main courses, as are mushrooms, porcini and chanterelles above all. Fortunately, it is possible to gather them in abundance in the forests of the Altopiano del Sole.

The rearing of cattle, goats and sheep, on the other hand, guarantees the production of excellent cheeses. The variety is truly astonishing: formagelle, ‘silter’, ‘casolet’, ricotta, ‘fatulì’, ‘bagoss’ and goat’s cheese, either natural or flavoured with herbs.

In the Lake Sebino area, at an ideal altitude, olive oil with important characteristics is produced, as well as in the Annunciata area, not far from Borno.

Worth trying are the different types of bread, white or rye, and the desserts, simple and genuine; ‘spongade’, biscuits and cakes with chestnut flour. Particular mention must be made of the two typical Borno sweets: Bosolà and Chisòla, the only two products to have obtained De.C.O. (denomination of municipal origin) status in Borno.
